This class is perfect for steak lovers, wine enthusiasts, foodies, home cooks, and live-fire barbecue fans looking to refine their skills and enjoy an incredible chef-guided meal.
Throughout this immersive evening, you’ll explore the fundamentals of beef sourcing, grading, and cut selection, followed by live demonstrations of three signature preparations:
Strip Steak — master high-heat searing & finishing techniques
Tri-Tip — learn the reverse sear, slicing, & temperature control
Red Wine–Braised Oxtail — rich, slow-braised perfection
Each preparation includes a guided wine tasting featuring handcrafted Sweetheart Winery selections included in your ticket price. You’ll discover how to pair different varietals with each cut of beef while learning how wine can enhance both flavor and dining experience.
Your evening concludes with a full chef-prepared dinner featuring everything taught in class—complete with Robuchon-style potatoes and additional sides crafted to complement the steaks.

At the heart of Timber & Tallow is The Pit Master Academy, its dedicated education branch. Founded by Jonathon "Carlos" Indermuehle of Heifers, Butts & Clucks BBQ and Jacob Gavin of Ribs & Whiskey BBQ, The Pit Master Academy is the next evolution of Proud Souls BBQ University, where they previously served as Director of Education and General Manager, respectively.
